Nutella Stuffed Cookies
These cookies could have been called "Anti Jinx Cookies" or "I Love You". They are not everyday cookies, Nutella is not very cheap in these neighborhoods (yes, I know, in my country in general) .
But "occasionally" is something else.
I wanted to gift someone whose having bad luck lately, and I remembered this recipe and modified it a little bit. You can do it as that recipe, and fill it with chilled Nutella, as I did, with tiny pieces of chocolate. Or thinking other options, put chopped roasted hazelnuts inside (or almonds), make thumbprint cookies, filled with Nutella, alfajores, etcetera.
They are really good, and if they work as they taste, we are saved!
Nutella Stuffed Cookies
Nutella 280 gr
Egg 1
Flour 180 gr
Salt 1 /2 tsp
Baking powder 1 /2 tsp
Chocolate 50-75 gr
- Preheat oven to 180°C
- Cut chocolate into small cubes
- Mix in a bowl the hazelnut cream with egg, until it is homogeneous
- Add the dry ingredients and mix to form a dough that does not stick to the hands
- Form balls the size of a walnut, yields approximately 28
- Put a piece of chocolate in each and enclose it with the dough and form a ball again
- Place on plate with parchment paper or a pan greased and floured
- Bake for 10 minutes, just to brown the base, and remaining soft on top
- Cool and store in airtight container
