Three Seasons Dessert: Yogurt panna cotta, marmalade and cocoa meringue



If you read the post title, you might think I'm a cheesy person. Part of this modern cook group who wants to be modern and puts funny names to dishes. Am I?
And the truth is I don´t know, but I´m careless




This dessert comes from thinking about the beginning of spring. What is spring for me?
But going further in this thought, is about three seasons: spring, summer and fall. I like the three for different things, and this dessert has three things, one for each season.

Spring, with stone fruits, flowering trees, and the heat begins to appear. Is the plum jam.
The summer, with the heat already installed, the nights with little 
warm wind, the pool, vacations. Summer is the freshness of the panna cotta, and yogurt, because of the summer diets.
And fall, which comes even if we don´t want to, are Sunday afternoons at home watching a film covered with a blanket. And that´s chocolate for me, and this recipe we have cocoa meringue.




Three Seasons Dessert
Cocoa meringue
Common sugar 60 g
Egg whites 2
Confectioner´s sugar 70 g
Cocoa powder 1 Tbsp
- Preheat oven to 100°C (210°F)
- Whip egg whites until stiff
- While still whipping, add common sugar little by little until it forms firm peaks
- Mix cocoa and confectioner´s sugar
- Add the mixture to the egg whites and mix softly with a spatula
- Put dollops of the meringue in a pan with parchment paper,
- Bake for 1 hour, turn off the oven and let it rest overnight

Vanilla yogurt panna cotta
Milk 1 cup (about 270 g)
Vanilla yogurt 1 cup (about 270 g)
Common sugar 1/4 cup (70 g)
Vanilla essence 1 tsp
Powdered gelatine 2 sachets (14 g)
Cold water 4 Tbps

- Hidrate gelatine in water and keep aside
- Put milk and sugar in a pan and bring to fire, until sugar dissolves
- Dissolve gelatine in warm milk
- Add vanilla to yogurt and mix with milk
- Divide in 4 glasses
- Refrigerate until set, about 30-45 minutes

Plus
Plum or another stone fruit marmalade 250 g 
- Drop 2-3 tablespoons of marmalade over the panna cotta and break a meringue on top


It is not hard to do it, the meringue can be made ​​ahead and stored in a tightly closed container.
The panna cotta is very fast to assemble, if you want to complicate it, the yogurt can be homemade, like I did. The jam, can be a good store-bought, instead of making it yourself.
